Ingredients
  

  • 2 cups white rice long-grain works best
  • 3 cups water
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 3 tablespoons fresh lime juice about 2 limes
  • 1 teaspoon lime zest
  • ½ cup fresh cilantro finely chopped
  • 1 clove garlic minced (optional)

Method
 

  1. Rinse the rice thoroughly under cold water until the water runs clear. This removes excess starch and prevents stickiness.
  2. In a medium saucepan, combine the rinsed rice, water, butter, and salt.
  3. Bring to a boil over high heat, then reduce to low heat, cover, and simmer for 15-18 minutes, or until the water is absorbed and the rice is tender.
  4. Remove from heat and let the rice sit, covered, for 5 minutes to steam.
  5. Fluff the rice with a fork to separate the grains.
  6. In a small bowl, combine the lime juice, lime zest, and minced garlic (if using).
  7. Pour the lime mixture over the hot rice and gently fold to combine.
  8. Add the chopped cilantro and fold again until evenly distributed.
  9. Taste and adjust seasonings as needed, adding more salt, lime juice, or cilantro according to your preference.
