Method
- Rinse the rice thoroughly under cold water until the water runs clear. This removes excess starch and prevents stickiness.
- In a medium saucepan, combine the rinsed rice, water, butter, and salt.
- Bring to a boil over high heat, then reduce to low heat, cover, and simmer for 15-18 minutes, or until the water is absorbed and the rice is tender.
- Remove from heat and let the rice sit, covered, for 5 minutes to steam.
- Fluff the rice with a fork to separate the grains.
- In a small bowl, combine the lime juice, lime zest, and minced garlic (if using).
- Pour the lime mixture over the hot rice and gently fold to combine.
- Add the chopped cilantro and fold again until evenly distributed.
- Taste and adjust seasonings as needed, adding more salt, lime juice, or cilantro according to your preference.
