  1. Ensure your mixing bowl and beaters are completely clean and dry. Even a tiny bit of grease or water can prevent your egg whites from whipping properly.
  2. Separate your eggs carefully, ensuring no yolk gets into the whites. For best results, use room temperature egg whites.
  3. Place the egg whites in your large bowl and add the cream of tartar.
  4. Beat with an electric mixer on medium speed until the mixture becomes foamy, approximately 1-2 minutes.
  5. Once foamy, gradually add the sugar, about 1 tablespoon at a time, while continuing to beat the mixture.
