- Rinse the jasmine rice in cold water until the water runs mostly clear, about 2-3 times. This removes excess starch and prevents gummy rice.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt.
- Bring the mixture to a gentle boil over medium-high heat.
- Once boiling, stir once, reduce heat to low, and cover with a tight-fitting lid.
- Simmer for 18-20 minutes, or until all liquid is absorbed and rice is tender.
- Remove from heat and let stand, covered, for 5-10 minutes to allow the rice to finish steaming.
- Fluff gently with a fork before serving. Garnish with cilantro or green onions if desired.
