  • 16 large sea scallops rinsed and patted dry
  • 4 tablespoons unsalted butter melted
  • 3 cloves garlic finely minced
  • 1 medium shallot finely diced
  • 2 tablespoons fresh lemon juice
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons fresh parsley chopped
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes optional
  • Lemon wedges for serving

Method
 

  1. Preheat your oven to 425°F (220°C) and lightly grease a shallow baking dish.
  2. Thoroughly rinse the scallops under cold water, then pat them completely dry with paper towels. (Excess moisture prevents proper browning.)
  3. In a medium bowl, combine the melted butter, minced garlic, diced shallot, and lemon juice.
  4. Place the scallops in the prepared baking dish, spacing them evenly apart.
  5. Pour the garlic butter mixture evenly over the scallops.
  6. In a small bowl, mix the breadcrumbs with chopped parsley, salt, pepper, and red pepper flakes (if using).
  7. Sprinkle the breadcrumb mixture over the scallops, covering each one completely.
  8. Bake in the preheated oven for 12-15 minutes, or until the scallops are opaque and the breadcrumbs are golden brown.
  9. For extra browning, broil for the final 1-2 minutes, watching carefully to prevent burning.
  10. Serve immediately with lemon wedges and extra pan sauce spooned over the top.
