Method
- Melt butter in a medium saucepan over medium heat.
- Once butter is fully melted, whisk in flour and salt until a smooth paste forms (this is your roux).
- Cook the roux for about 30 seconds, whisking constantly to prevent burning.
- Gradually add milk while continuously whisking to prevent lumps from forming.
- Continue cooking and whisking until mixture thickens enough to coat the back of a spoon, about 3-5 minutes.
- Reduce heat to low and add grated cheese a handful at a time, stirring until each addition is fully melted before adding more.
- Add optional garlic powder and cayenne if desired, stirring to combine.
- If sauce becomes too thick, thin with additional warm milk, one tablespoon at a time.
