Ingredients
  

  • 1 large butternut squash
  • 2 tablespoons butter or olive oil optional
  • 2 tablespoons brown sugar or maple syrup optional
  • Salt and pepper to taste optional
  • Herbs like rosemary thyme, or sage (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Position a rack in the middle of the oven.
  2. Wash the exterior of the butternut squash. Using a sharp knife, carefully cut the squash lengthwise, starting at the stem and working your way down.
  3. Using a spoon, scoop out the seeds and stringy pulp from the center cavity of each half.
  4. If desired, season the squash with butter, brown sugar, maple syrup, salt, pepper, or your favorite herbs.
  5. Place the halves cut-side up on a baking sheet. If you've added butter or oil, you can place the halves cut-side down for part of the baking time to caramelize the surface.
  6. Place in the preheated oven and bake for approximately 60-90 minutes. Cooking time varies based on the size of your squash.
  7. The squash is done when it can be easily pierced with a fork in the thickest part.
  8. Serve the squash directly in its skin or scoop out the flesh to mash or puree.
