Method
- Preheat oven to 350°F (175°C). Position a rack in the middle of the oven.
- Wash the exterior of the butternut squash. Using a sharp knife, carefully cut the squash lengthwise, starting at the stem and working your way down.
- Using a spoon, scoop out the seeds and stringy pulp from the center cavity of each half.
- If desired, season the squash with butter, brown sugar, maple syrup, salt, pepper, or your favorite herbs.
- Place the halves cut-side up on a baking sheet. If you've added butter or oil, you can place the halves cut-side down for part of the baking time to caramelize the surface.
- Place in the preheated oven and bake for approximately 60-90 minutes. Cooking time varies based on the size of your squash.
- The squash is done when it can be easily pierced with a fork in the thickest part.
- Serve the squash directly in its skin or scoop out the flesh to mash or puree.
