- Remove your prime rib from the refrigerator and let it stand at room temperature for 2 hours before roasting.
- Preheat your oven to 450°F (230°C). Position a rack in the lower third of the oven.
- In a small bowl, combine steak seasoning, minced garlic, olive oil, herbs (if using), salt, and pepper to create a paste.
- Pat the roast dry with paper towels.
- Rub the seasoning paste all over the roast, ensuring even coverage.
- Place the roast bone-side down (fat-side up) on the rack in your roasting pan.
- Insert your meat thermometer into the thickest part of the roast, avoiding contact with bone.
- Roast at 450°F for 15 minutes to develop a flavorful crust.
- Without opening the oven, reduce temperature to 325°F (165°C) and continue roasting until the internal temperature reaches your desired doneness.
- Transfer the roast to a cutting board and tent loosely with aluminum foil. Let it rest for 15-20 minutes before carving.
- Carve by slicing along the rib bones to separate them from the roast, then slice the meat to your desired thickness.
