Ingredients
  

  • 4 6-ounce cod fillets, patted dry
  • 4 tablespoons butter divided
  • 1 cup buttery cracker crumbs about 1 sleeve, crushed
  • 2 tablespoons dry white wine
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with 1 tablespoon of butter.
  2. Place cod fillets in the prepared dish. Season with salt and pepper to taste.
  3. In a small skillet over medium heat, melt 3 tablespoons of butter. Stir in white wine and lemon juice, then remove from heat.
  4. Pour the butter mixture evenly over the cod, ensuring each fillet gets a touch of that delicious sauce.
  5. In a bowl, combine cracker crumbs with any remaining butter bits from the pan. Sprinkle the mixture evenly atop the cod fillets.
  6. Bake in the preheated oven for 20–25 minutes, or until the fish flakes easily with a fork and the topping is golden brown.
  7. Garnish with chopped parsley and serve hot with lemon wedges or your favorite side dishes.
