Method
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with 1 tablespoon of butter.
- Place cod fillets in the prepared dish. Season with salt and pepper to taste.
- In a small skillet over medium heat, melt 3 tablespoons of butter. Stir in white wine and lemon juice, then remove from heat.
- Pour the butter mixture evenly over the cod, ensuring each fillet gets a touch of that delicious sauce.
- In a bowl, combine cracker crumbs with any remaining butter bits from the pan. Sprinkle the mixture evenly atop the cod fillets.
- Bake in the preheated oven for 20–25 minutes, or until the fish flakes easily with a fork and the topping is golden brown.
- Garnish with chopped parsley and serve hot with lemon wedges or your favorite side dishes.
