Ingredients
  

  • 4 cups sweet potatoes about 2 large, peeled and cut into 1-inch cubes
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary chopped (or 1 teaspoon dried)
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons balsamic vinegar

Method
 

  1. Preheat your oven to 425°F (220°C). Position a rack in the middle of the oven.
  2. Wash, peel, and cut the sweet potatoes into 1-inch cubes of roughly equal size to ensure even cooking.
  3. In a large bowl, combine the sweet potato cubes, chopped onion, minced garlic, olive oil, rosemary, paprika, salt, and pepper.
  4. Toss everything together until the sweet potatoes are evenly coated with oil and seasonings.
  5. Spread the mixture in a single layer on a large baking sheet. Avoid overcrowding to ensure proper caramelization.
  6. Roast for 15 minutes, then remove from the oven and carefully flip the sweet potatoes.
  7. Return to the oven and roast for another 10-15 minutes until the edges are caramelized and the potatoes are fork-tender.
  8. Transfer to a serving dish and drizzle with balsamic vinegar while still hot.
  9. Serve immediately for the best texture and flavor.
