  • 1 pound about 14 ounces fresh broccoli, cut into florets
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes optional, for heat
  • 1 tablespoon fresh lemon juice optional, for serving
  • 2 tablespoons grated Parmesan cheese optional, for serving

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Wash the broccoli thoroughly and pat dry with paper towels. Important: Make sure your broccoli is completely dry before roasting—wet broccoli will steam rather than roast!
  3. Cut the broccoli into evenly-sized florets. If using the stems, peel the tough outer layer and slice into 1/4-inch thick coins.
  4. In a large mixing bowl, toss the broccoli with olive oil, minced garlic, salt, pepper, and red pepper flakes (if using) until evenly coated.
  5. Spread the broccoli in a single layer on the prepared baking sheet. Avoid overcrowding to ensure proper browning.
  6. Roast in the preheated oven for 15-20 minutes, tossing halfway through cooking time, until the edges are crispy and slightly browned but the broccoli is still tender when pierced with a fork.
  7. If using, sprinkle with fresh lemon juice and Parmesan cheese immediately after removing from the oven.
  8. Serve hot as a delicious side dish to complement any meal.
