Ingredients

  • 4 large Russet potatoes cut into even wedges
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon freshly ground black pepper
  • Cooking spray for the baking sheet
  • Fresh parsley chopped (optional, for garnish)

Method

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and spray generously with cooking spray.
  2. Scrub the potatoes clean and cut them into even-sized wedges or sticks, about 1/2-inch thick. Pro tip: Keeping the cuts uniform ensures even cooking!
  3. Place the cut potatoes in a large bowl of cold water and let them soak for 30 minutes. This removes excess starch and helps achieve maximum crispiness.
  4. Drain the potatoes and pat them completely dry with paper towels. Any moisture will prevent proper crisping.
  5. In a large bowl, toss the dried potatoes with olive oil until evenly coated.
  6. In a small bowl, mix together the garlic powder, paprika, dried oregano, onion powder, salt, and black pepper. Sprinkle this seasoning mixture over the oiled potatoes and toss until evenly coated.
  7. Arrange the seasoned potato wedges in a single layer on the prepared baking sheet, making sure they don't touch each other.
  8. Bake for 30-35 minutes, flipping halfway through, until the fries are golden brown and crispy on the outside.
  9. For extra crispiness, broil for the final 1-2 minutes, watching carefully to prevent burning.
  10. Remove from the oven and let cool for 5 minutes before serving. This brief cooling period helps the exterior crisp up even more.
