Ingredients
  

  • 2 cups all-purpose flour sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 4 medium ripe bananas mashed
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.
  2. In a mixing bowl, sift together the flour, baking soda, and salt.
  3. In a stand mixer, cream butter and sugar together until light and fluffy (3-5 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in mashed bananas with a spatula until evenly distributed. Do not overmix.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve plain or with butter. Optionally garnish with banana slices or powdered sugar.
