- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.
- In a mixing bowl, sift together the flour, baking soda, and salt.
- In a stand mixer, cream butter and sugar together until light and fluffy (3-5 minutes).
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Fold in mashed bananas with a spatula until evenly distributed. Do not overmix.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve plain or with butter. Optionally garnish with banana slices or powdered sugar.
