Ingredients
  

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¾ cup butter softened
  • 1 cup white sugar
  • 1 large egg
  • 1 tablespoon water
  • ¼ cup molasses
  • 2 tablespoons white sugar for rolling

Method
 

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together flour, ground ginger, baking soda, cinnamon, cloves, and salt.
  3. In a large bowl, cream together the butter and 1 cup sugar until light and fluffy, about 2-3 minutes. Beat in the egg, then stir in the water and molasses until well combined.
  4. Gradually stir the dry ingredients into the molasses mixture, mixing just until incorporated.
  5. Place the remaining 2 tablespoons of sugar in a small bowl. Shape the dough into 1½-inch balls, and roll each ball in the sugar to coat completely.
  6. Place the cookies 2 inches apart on the prepared baking sheets.
  7. Bake for 8-10 minutes for softer cookies or 10-12 minutes for slightly crispier edges. The tops should be crackled but the centers still soft when done.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
