Peruvian Lomo Saltado

This lomo saltado recipe is a traditional Peruvian dish of sliced beef stir-fried with hot chiles, juicy tomatoes, onion, and crispy French fries.

Ingredients
  

  • 1 lb beef sirloin cut into 1-inch strips
  • 2 tbsp soy sauce
  • 1 tbsp red wine vinegar
  • 2 cloves garlic minced
  • 1 large red onion cut into wedges
  • 2 tomatoes cut into thick wedges
  • 1 –2 aji amarillo peppers seeded and sliced (or jalapeño)
  • 1 16 ounce package frozen French fries
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro chopped (for garnish)

Method
 

  1. Preheat your oven to 425°F (220°C). Spread the frozen French fries on a baking sheet and bake for 20–25 minutes until golden and crispy.
  2. In a bowl, combine beef strips, soy sauce, vinegar, and garlic. Let it rest for 10 minutes to absorb flavors.
  3. Heat 1 tbsp oil in a wok or large skillet over high heat. Add onions and peppers, stir-fry for 2–3 minutes until slightly softened.
  4. Push veggies to the side and add remaining oil. Sear the beef in a single layer for 2–3 minutes until browned but still juicy.
  5. Add tomato wedges, toss everything with the pan juices, and season with salt and pepper. Stir for another minute.
  6. Serve the beef and veggies over a bed of crispy fries. Sprinkle fresh cilantro on top for a burst of color and aroma.
