- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a medium bowl, toss drained pineapple chunks with 1 cup of shredded Cheddar.
- Combine cracker crumbs, melted butter, sugar, and salt in another bowl until evenly coated.
- Spread the pineapple-and-cheese mixture in the prepared dish, smoothing into an even layer.
- Sprinkle the remaining 1 cup of Cheddar over the pineapple layer.
- Top with the buttery cracker crumb mixture, pressing gently to adhere.
- Bake for 25–30 minutes, or until the crust is golden brown and bubbly.
- Let cool for 5 minutes before serving warm.
