- Preheat your oven to 425°F (220°C). Place the butter in a 9x13-inch baking dish and put the dish in the preheating oven until the butter is completely melted, about 3-4 minutes.
- In a large mixing bowl, combine the biscuit mix, sour cream, and lemon-lime soda. If using, add the optional parsley and garlic powder. Stir gently until just combined. The dough will be very soft and slightly sticky.
- Sprinkle some additional biscuit mix on a clean work surface and turn the dough out onto it. Dust the top of the dough lightly with more biscuit mix.
- Gently fold the dough over itself 4-5 times to create layers. This creates those gorgeous flaky layers that make biscuits irresistible!
- Pat or roll the dough to about 1-inch thickness. Using a round biscuit cutter or the rim of a glass, cut out biscuits without twisting the cutter (twisting seals the edges and prevents rising).
- Carefully remove the hot baking dish from the oven. Place each biscuit in the melted butter, then flip it over so both sides are coated.
- Arrange the biscuits in the dish with sides touching for soft edges or spaced apart for crispy edges.
- Bake for 15-18 minutes, or until the tops are golden brown and the biscuits are cooked through.
- Remove from the oven and let cool for 5 minutes before serving warm.
