Pioneer Woman's Homestyle 7-Up Biscuits

Ingredients
  

  • 4 cups biscuit baking mix like Bisquick
  • 1 cup sour cream
  • 1 cup lemon-lime soda 7-Up or Sprite
  • 1/2 cup unsalted butter melted
  • 2 tablespoons fresh parsley finely chopped (optional)
  • 1/4 teaspoon garlic powder optional

Method
 

  1. Preheat your oven to 425°F (220°C). Place the butter in a 9x13-inch baking dish and put the dish in the preheating oven until the butter is completely melted, about 3-4 minutes.
  2. In a large mixing bowl, combine the biscuit mix, sour cream, and lemon-lime soda. If using, add the optional parsley and garlic powder. Stir gently until just combined. The dough will be very soft and slightly sticky.
  3. Sprinkle some additional biscuit mix on a clean work surface and turn the dough out onto it. Dust the top of the dough lightly with more biscuit mix.
  4. Gently fold the dough over itself 4-5 times to create layers. This creates those gorgeous flaky layers that make biscuits irresistible!
  5. Pat or roll the dough to about 1-inch thickness. Using a round biscuit cutter or the rim of a glass, cut out biscuits without twisting the cutter (twisting seals the edges and prevents rising).
  6. Carefully remove the hot baking dish from the oven. Place each biscuit in the melted butter, then flip it over so both sides are coated.
  7. Arrange the biscuits in the dish with sides touching for soft edges or spaced apart for crispy edges.
  8. Bake for 15-18 minutes, or until the tops are golden brown and the biscuits are cooked through.
  9. Remove from the oven and let cool for 5 minutes before serving warm.
