Ingredients

  • 1 lb boneless skinless chicken breast cut into 1-inch pieces
  • 3 cups all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons lemon juice
  • Vegetable oil for frying

Method

  1. In a medium bowl, whisk together flour, garlic powder, salt, and black pepper. This seasoned flour is the secret to crispy coating.
  2. In a separate bowl, beat the eggs and lemon juice until frothy.
  3. Dip each chicken piece into the egg mixture, then coat thoroughly in the flour blend. Press the flour onto the chicken to ensure it sticks.
  4. Heat oil in a deep skillet or Dutch oven to 350°F (175°C). Use a thermometer for accuracy.
  5. Working in batches, fry the chicken pieces for 3–4 minutes or until golden brown and cooked through.
  6. Transfer to a paper towel-lined plate to drain excess oil.
