Pork Chili Verde (Green Pork Chili)

Chef John's pork chili verde features tender chunks of pork simmered in a spicy tomatillo sauce. It's a warm, tasty dish the whole family will enjoy!

Ingredients
  

  • 2 tablespoons vegetable oil
  • 2 pounds pork shoulder cut into 1-inch cubes
  • 1 medium onion chopped
  • ½ teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • 1 pound tomatillos husked and quartered
  • 2 cups chicken broth
  • 3 cloves garlic minced
  • ¼ cup fresh cilantro chopped

Method
 

  1. Heat the vegetable oil in a large heavy pot over high heat until nearly smoking.
  2. Add pork cubes in a single layer. Sear without stirring until browned on one side, about 4–5 minutes.
  3. Flip the pork pieces and brown on the other side, another 4–5 minutes.
  4. Reduce heat to medium; stir in chopped onion and ½ teaspoon kosher salt. Cook until the onion is translucent, about 4 minutes.
  5. Sprinkle in oregano, cumin, coriander, and cayenne. Stir until fragrant, about 2 minutes.
  6. Add tomatillos, garlic, and chicken broth. Bring to a gentle simmer.
  7. Reduce heat to low, cover, and cook until pork is tender and sauce has thickened, about 1 hour 45 minutes.
  8. Stir in fresh cilantro and adjust seasoning with salt and pepper before serving.
