Method
- Heat the vegetable oil in a large heavy pot over high heat until nearly smoking.
- Add pork cubes in a single layer. Sear without stirring until browned on one side, about 4–5 minutes.
- Flip the pork pieces and brown on the other side, another 4–5 minutes.
- Reduce heat to medium; stir in chopped onion and ½ teaspoon kosher salt. Cook until the onion is translucent, about 4 minutes.
- Sprinkle in oregano, cumin, coriander, and cayenne. Stir until fragrant, about 2 minutes.
- Add tomatillos, garlic, and chicken broth. Bring to a gentle simmer.
- Reduce heat to low, cover, and cook until pork is tender and sauce has thickened, about 1 hour 45 minutes.
- Stir in fresh cilantro and adjust seasoning with salt and pepper before serving.
