Ingredients
  

  • ½ cup brown sugar
  • 1 tablespoon coarse black pepper
  • 1 tablespoon kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons mustard powder
  • 1 teaspoon ground ginger
  • 2 teaspoons onion powder
  • 1 teaspoon red pepper flakes
  • ½ teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 3- to 4-pound pork loin

Method
 

  1. In a medium bowl, whisk together brown sugar, black pepper, salt, garlic powder, mustard powder, ground ginger, onion powder, red pepper flakes, cayenne pepper, cumin, paprika, and thyme until well combined.
  2. Pat the pork loin dry with paper towels. Generously rub the spice mixture all over, pressing it into every crevice.
  3. Wrap the seasoned pork tightly in plastic wrap and place it in a 9×13-inch baking dish.
  4. Refrigerate for at least 4 hours, or up to overnight, to maximize flavor infusion.
  5. When ready to cook, remove plastic wrap and let the pork rest at room temperature for 30 minutes. Roast until the internal temperature reaches 145°F, then let it rest 10 minutes before slicing.
