- In a medium bowl, whisk together brown sugar, black pepper, salt, garlic powder, mustard powder, ground ginger, onion powder, red pepper flakes, cayenne pepper, cumin, paprika, and thyme until well combined.
- Pat the pork loin dry with paper towels. Generously rub the spice mixture all over, pressing it into every crevice.
- Wrap the seasoned pork tightly in plastic wrap and place it in a 9×13-inch baking dish.
- Refrigerate for at least 4 hours, or up to overnight, to maximize flavor infusion.
- When ready to cook, remove plastic wrap and let the pork rest at room temperature for 30 minutes. Roast until the internal temperature reaches 145°F, then let it rest 10 minutes before slicing.
