Method
- Gather all your ingredients before starting the cooking process. This includes measuring out the olive oil, lemon juice, and chicken broth. Chop the garlic and parsley, and flatten the chicken breasts if necessary. Having everything ready will streamline the cooking process.
- Place a large skillet over medium-high heat and add the olive oil. Allow the oil to heat until shimmering but not smoking. Swirl the oil around to coat the bottom of the skillet evenly.
- Carefully add the flattened chicken breasts to the hot skillet. Sear each side for about 5-6 minutes until golden brown. Ensure not to overcrowd the pan. Once done, remove the chicken and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds, stirring constantly to prevent burning. Remove when fragrant and lightly golden.
- Pour in the chicken broth and lemon juice to deglaze the skillet. Scrape up any browned bits with a wooden spoon. Simmer for 1-2 minutes to reduce slightly.
- Return the chicken breasts to the skillet, submerge in sauce, season with salt and pepper. Cover and simmer for 10 minutes, or until the internal temperature reaches 165°F.
- Remove the lid and add the lemon zest. Stir gently to combine and cook for another minute to meld flavors.
- Remove from heat, garnish with parsley, and serve hot with sauce drizzled over. Pair with rice or vegetables.
