Ingredients
  

  • Cooking spray
  • 4 boneless skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup chunky salsa
  • 1 cup shredded Mexican cheese blend
  • 2 tablespoons chopped fresh cilantro optional
  • Lime wedges for serving

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly coat a baking dish with cooking spray.
  2. Season chicken breasts evenly with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Arrange the chicken in the prepared dish and spoon salsa over each piece.
  4. Bake uncovered for 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  5. Sprinkle shredded cheese on top, then return to the oven for 3–5 minutes until melted and bubbly.
  6. Garnish with fresh cilantro and serve with lime wedges over rice, noodles, or in warm tortillas.
