This ramen soup is easy to make by simmering noodles in vegetable broth; season with soy, ginger, chili and sesame oil for lots of umami flavor.

Ingredients
  

  • cups vegetable broth
  • 2 packs ramen noodles discard seasoning packets
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh ginger grated
  • ½ teaspoon chili flakes optional
  • 1 teaspoon sesame oil
  • Sliced scallions and soft-boiled egg for garnish

Method
 

  1. Gather the ingredients and prep your workspace.
  2. In a medium saucepan, bring the vegetable broth to a gentle simmer over medium heat.
  3. Stir in soy sauce, grated ginger, chili flakes, and sesame oil. Let the broth simmer 3–4 minutes to infuse the flavors.
  4. Add the ramen noodles, breaking them apart if needed. Cook until tender, about 2–3 minutes.
  5. Divide noodles and broth into two bowls. Top each with sliced scallions and a soft-boiled egg.
  6. Serve immediately and slurp up that mouthwatering umami goodness!
