Ingredients
  

  • 1 3 ounce package ramen noodles (any flavor)
  • 2 large eggs beaten
  • 1 tablespoon butter or oil
  • Seasoning packet from ramen
  • 1 tablespoon chopped fresh parsley optional
  • Pinch of black pepper
  • Hot sauce for serving

Method
 

  1. Bring a pot of water to a boil; add ramen noodles and cook for 3 minutes.
  2. Drain the noodles, reserving a splash of cooking water, then stir in the ramen seasoning packet and parsley.
  3. Meanwhile, melt butter in a nonstick skillet over medium heat. Pour in the beaten eggs and gently scramble until just set. Remove from heat.
  4. Return the seasoned noodles to the skillet, fold in the scrambled eggs, and stir to combine. Add a tablespoon of reserved noodle water if you like it saucier.
  5. Season with black pepper and serve hot. Drizzle with your favorite hot sauce and enjoy!
