Real Aioli

Making aoli is easy and makes one of the greatest condiments of all time. Chef John's recipe simply emulsifies olive oil into freshly crushed garlic.

Ingredients
  

  • 4 large cloves fresh garlic peeled and sliced
  • 4 large cloves fresh garlic peeled and sliced
  • ½ teaspoon kosher salt
  • 1 tablespoon fresh lemon juice
  • ¾ cup extra-virgin olive oil

Method
 

  1. Place the garlic slices and kosher salt in a mortar.
  2. Use the pestle to crush and grind the garlic into a fine, uniform paste (about 4–5 minutes).
  3. Transfer the garlic paste to a small bowl and stir in the lemon juice.
  4. While whisking constantly, stream in the olive oil a few drops at a time until the mixture thickens and emulsifies.
  5. Taste and adjust with more lemon juice or salt as needed.
