Method
- Thoroughly wash the apples before peeling and coring to remove any pesticides or residue. Save the flesh for another recipe.
- Place the apple peels and cores in a large saucepan and add 5 cups of water.
- If using, add the cinnamon stick for a warm, aromatic flavor.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover, and simmer for 25-30 minutes until the peels are very soft and the water has taken on a golden color.
- Remove from heat and allow to cool slightly for about 15 minutes.
- Strain the mixture through a fine mesh strainer or cheesecloth into a large bowl, pressing gently on the solids to extract as much juice as possible.
- Stir in the sugar while the juice is still warm until completely dissolved.
- Add the lemon juice and stir well.
- Allow the juice to cool completely before transferring to glass bottles or jars.
- Refrigerate for at least 2 hours before serving for the best flavor.
