Refreshing Homemade Apple Juice From Scratch

Ingredients
  

  • Peels and cores from 8-10 medium apples preferably a sweet variety like Gala, Fuji, or Honeycrisp
  • 5 cups filtered water
  • 2-3 tablespoons granulated sugar adjust to taste
  • 1 cinnamon stick optional
  • 1 teaspoon lemon juice helps preserve color

Method
 

  1. Thoroughly wash the apples before peeling and coring to remove any pesticides or residue. Save the flesh for another recipe.
  2. Place the apple peels and cores in a large saucepan and add 5 cups of water.
  3. If using, add the cinnamon stick for a warm, aromatic flavor.
  4. Bring the mixture to a boil over medium-high heat.
  5. Once boiling, reduce heat to low, cover, and simmer for 25-30 minutes until the peels are very soft and the water has taken on a golden color.
  6. Remove from heat and allow to cool slightly for about 15 minutes.
  7. Strain the mixture through a fine mesh strainer or cheesecloth into a large bowl, pressing gently on the solids to extract as much juice as possible.
  8. Stir in the sugar while the juice is still warm until completely dissolved.
  9. Add the lemon juice and stir well.
  10. Allow the juice to cool completely before transferring to glass bottles or jars.
  11. Refrigerate for at least 2 hours before serving for the best flavor.
