Ingredients
  

  • 2 cups fresh pineapple cubed
  • 2 large kiwis peeled and sliced
  • 2 firm bananas sliced
  • 2 oranges peeled and sectioned
  • 1 cup seedless green grapes halved
  • 1 cup strawberries hulled and sliced
  • 1 cup blueberries
  • cup fresh orange juice
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon orange zest
  • ½ teaspoon vanilla extract optional
  • Fresh mint leaves for garnish optional

Method
 

  1. Prepare all fruits by washing thoroughly and cutting into bite-sized pieces.
  2. In a small bowl, whisk together orange juice, honey, lemon juice, orange zest, and vanilla extract if using. This creates your citrus dressing.
  3. In a large glass serving bowl, gently combine all the prepared fruits.
  4. Pour the citrus dressing over the fruit mixture and toss gently to coat evenly.
  5. Cover the bowl with plastic wrap and refrigerate for at least 3 hours to allow the flavors to meld together.
  6. Before serving, gently toss the fruit salad once more and garnish with fresh mint leaves if desired.
