  • 2 to 3 pounds chicken wings tips removed and joints split
  • 0.5 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • Oil for deep-frying (about 2 quarts)
  • 0.5 cup hot sauce e.g., Frank's RedHot
  • 4 tablespoons unsalted butter melted
  • Celery sticks and blue cheese or ranch dressing for serving

Method
 

  1. In a large bowl, whisk together flour, paprika, cayenne pepper, and salt until evenly combined.
  2. Pat chicken wings dry with paper towels; dredge each wing in the seasoned flour, shaking off any excess.
  3. Heat oil in a deep fryer or large Dutch oven to 375°F (190°C). Use a candy or deep-fry thermometer for accuracy.
  4. Working in batches, carefully lower wings into hot oil and fry for 10–12 minutes, or until golden brown and crispy. Transfer to a paper-towel-lined plate.
  5. Meanwhile, in a medium bowl, whisk together hot sauce and melted butter until smooth and well blended.
  6. Place crispy wings in a large bowl, pour buffalo sauce over top, and toss gently to coat every piece in that spicy, tangy goodness.
  7. Serve immediately with celery sticks and your favorite blue cheese or ranch dip for a classic pub-style experience.
