- Preheat the oven to 350°F (175°C). Line a large baking sheet with foil for easy cleanup.
- In a bowl, combine shredded chicken with canola oil and season with salt and pepper to taste.
- Spread half of the tortilla chips in an even layer on the baking sheet.
- Sprinkle half of the chicken, cheese, salsa, and diced tomato over the chips. Repeat the layers with remaining chips and toppings.
- Place in the oven and bake for 12–15 minutes or until the cheese is melted and bubbly.
- Remove from oven. Top with jalapeños, onions, cilantro, sour cream, and guacamole. Serve hot!
