Roasted Delicata Squash

Ingredients
  

  • 1 large delicata squash – ends trimmed halved lengthwise, seeds removed
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • Pinch of cayenne pepper optional for extra warmth

Method
 

  1. Gather all ingredients. Preheat the oven to 450°F (232°C) and line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Place squash halves cut-side up on the baking sheet. Drizzle with olive oil, then sprinkle sea salt and cayenne pepper evenly.
  3. Roast in the preheated oven for 20–25 minutes, or until tender and the edges turn golden brown.
  4. Flip the slices halfway through baking for even caramelization and crisping.
  5. Remove from the oven, let cool slightly, then slice into ½-inch crescents.
  6. Serve warm as a healthy, flavorful side dish alongside your favorite main courses.
