Ingredients

  • 2 teaspoons paprika
  • 2 teaspoons paprika
  • Sea salt and freshly ground black pepper to taste
  • 4 tablespoons unsalted butter melted
  • 1 whole duck about 5 lbs, giblets removed

Method

  1. Gather all ingredients. Pat the duck dry with paper towels and season inside and out with salt and pepper. Let it rest for 10 minutes at room temperature.
  2. Combine paprika, salt, and pepper. Rub the spice blend evenly over the duck’s skin.
  3. Preheat the oven to 375°F (190°C). Place the duck on a rack in a roasting pan. Roast for 1 hour, basting every 20 minutes with melted butter.
  4. Increase oven temperature to 425°F (220°C) and roast for an additional 10 minutes until the skin is deeply golden. Remove from oven and let rest for 10–15 minutes before carving.
