Roasted Pork Bánh Mì (Vietnamese Sandwich)

This Vietnamese lunch favorite combines crusty baguette, juicy roast pork, creamy pâté, and crunchy pickled vegetables for a flavor-packed banh mi.

Ingredients
  

  • 1 crusty French baguette or sandwich roll
  • 1 lb pork shoulder or loin thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 1 garlic clove minced
  • ¼ cup julienned 2-inch matchsticks daikon radish
  • ¼ cup julienned 2-inch matchsticks carrot
  • 2 tbsp white vinegar
  • 1 tbsp water
  • 2 tbsp pâté
  • 1 tbsp mayonnaise
  • 4 fresh cilantro sprigs
  • 2 slices cucumber
  • 2 slices jalapeño optional
  • Salt and pepper to taste

Method
 

  1. Gather all your ingredients and preheat the oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup.
  2. In a bowl, mix soy sauce, fish sauce, sugar, and minced garlic. Add pork slices and marinate for 10 minutes.
  3. Meanwhile, toss julienned daikon and carrot with vinegar, water, a pinch of salt, and sugar. Set aside to quick pickle.
  4. Place pork on the prepared baking sheet and roast for 8–10 minutes, until edges are caramelized and pork is cooked through.
  5. Slice the baguette lengthwise, leaving a hinge. Spread pâté on one side and mayonnaise on the other.
  6. Layer roasted pork on the bottom, then top with pickled vegetables, cucumber slices, cilantro, and jalapeño.
  7. Season with a sprinkle of salt and pepper, then close the sandwich. Press lightly and slice in half.
  8. Serve immediately and enjoy your crunchy, savory banh mi!
