Ingredients
  

  • 1 tablespoon olive oil or cooking spray
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 16-ounce package frozen baby lima beans
  • 2 cups low-sodium chicken broth
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Optional: 2 slices bacon chopped (for added flavor)
  • Optional: 1 tablespoon fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil or spray a large saucepan with cooking spray and place over medium heat.
  2. If using bacon, add it now and cook until just crispy, about 3-4 minutes.
  3. Add the diced onion to the hot pan and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth, add the bay leaf and dried thyme, and bring to a boil.
  6. Add the frozen lima beans to the boiling broth, reduce heat to a simmer.
  7. Cover and cook for 30-35 minutes, or until the beans are tender but not mushy.
  8. Remove the bay leaf, season with salt and pepper to taste.
  9. If desired, garnish with fresh parsley before serving.
