Ingredients

  • 8 ounces fresh bean sprouts
  • 1 cup chopped shrimp
  • 4 large eggs
  • 3 green onions thinly sliced
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Method

  1. In a large bowl, whisk the eggs and season with garlic powder, salt, and pepper.
  2. Fold in bean sprouts, chopped shrimp, and green onions until evenly combined.
  3. Heat a thin layer of vegetable oil in a non-stick skillet over medium heat.
  4. Pour about 1/3 cup of the egg mixture into the skillet, shaping it into a patty. Cook until golden brown on both sides, about 3 minutes per side. Repeat with remaining mixture.
  5. In a small saucepan, combine chicken broth, soy sauce, oyster sauce, and sugar. Bring to a simmer.
  6. Stir cornstarch and water together, then whisk into the sauce. Cook until thickened, about 1 minute.
  7. Serve the patties hot, drizzled with the savory sauce.
