Ingredients
  

  • 2 skinless boneless chicken breasts (about 1 lb)
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs Panko or Italian-style
  • 1/2 teaspoon dried parsley or Italian seasoning
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Method
 

  1. Preheat the oven to 425°F (220°C) and lightly grease a baking pan.
  2. Pat chicken breasts dry and season both sides with salt, pepper, and garlic powder.
  3. Spread a thin layer of mayonnaise over the top of each chicken breast.
  4. In a small bowl, combine breadcrumbs, Parmesan cheese, and dried parsley.
  5. Press the breadcrumb mixture firmly onto the mayo-coated side of each chicken piece, creating a crispy crust.
  6. Place the chicken crust-side up in the prepared pan.
  7. Bake for 18–20 minutes or until the internal temperature reaches 165°F (74°C) and the crust is golden brown.
  8. Let the chicken rest for 5 minutes before slicing to lock in the juicy goodness.
  9. Serve with a fresh salad, roasted vegetables, or pasta for a complete meal.
