Ingredients
  

  • 2 –3 lb boneless pork loin roast
  • 1 ½ tablespoons fresh rosemary chopped
  • 1 ½ tablespoons fresh thyme chopped
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix rosemary, thyme, garlic, salt, and pepper with olive oil to form a paste.
  3. Rub the herb mixture all over the pork loin, ensuring even coverage.
  4. Place the roast on a rack in a shallow roasting pan. Insert a meat thermometer into the thickest part.
  5. Roast in the preheated oven for 1 hour, or until the internal temperature reaches 145°F (63°C).
  6. Remove from oven and tent with foil. Let rest for 10–15 minutes to seal in the juices.
  7. Slice against the grain into ½-inch thick pieces and serve.
