Method
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix rosemary, thyme, garlic, salt, and pepper with olive oil to form a paste.
- Rub the herb mixture all over the pork loin, ensuring even coverage.
- Place the roast on a rack in a shallow roasting pan. Insert a meat thermometer into the thickest part.
- Roast in the preheated oven for 1 hour, or until the internal temperature reaches 145°F (63°C).
- Remove from oven and tent with foil. Let rest for 10–15 minutes to seal in the juices.
- Slice against the grain into ½-inch thick pieces and serve.
