- In a medium saucepan over medium-high heat, combine the water and sugar. Stir continuously until the sugar is fully dissolved into a clear simple syrup.
- Add the sliced strawberries to the saucepan. Bring the mixture to a gentle boil, then reduce heat and let it simmer for 10 minutes, stirring occasionally.
- Remove the pan from heat and allow the syrup to cool for 5 minutes. For a smooth pourable syrup, strain through a fine-mesh sieve, pressing on solids to extract all the juice.
- Transfer the cooled strawberry syrup to a clean glass jar or bottle. Seal tightly and refrigerate for up to two weeks.
