- Place the beef tongue in your slow cooker with onions, garlic, and bay leaves. Generously season with salt.
- Pour enough water to fully cover the beef mixture. Cover and set to low for 8 hours, or until the tongue is fork-tender.
- Once cooked, transfer the tongue to a cutting board. Remove and discard the outer skin. Slice or shred the meat into bite-sized pieces.
- In a skillet, melt butter over medium-high heat. Add the sliced lengua, sautéing until golden edges appear, about 3-4 minutes.
- Serve on warm tortillas with fresh cilantro, diced onion, and a squeeze of lime for authentic lengua tacos.
