Ingredients
  

  • 2 pounds beef sirloin cut into 2-inch strips
  • 1 large onion sliced
  • 1 green bell pepper sliced
  • 2 medium tomatoes diced
  • 3 cloves garlic minced
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sugar
  • ½ cup beef broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • Salt and freshly ground black pepper to taste

Method
 

  1. Season sirloin strips with salt and pepper. Place them at the bottom of your slow cooker.
  2. Layer sliced onion, bell pepper, diced tomatoes, and garlic on top of the beef.
  3. In a bowl, whisk together soy sauce, sugar, and beef broth. Pour evenly over the meat and vegetables.
  4. Cover and cook on Low for 6–7 hours or on High for 3–4 hours, until the beef is fork-tender.
  5. Stir in the cornstarch slurry about 15 minutes before serving. Replace the lid and let the sauce thicken.
  6. Spoon the pepper steak over steamed rice or egg noodles and garnish with chopped green onions or parsley.
