Ingredients
  

  • 3 pounds potatoes peeled and thinly sliced
  • 2 cups cooked ham diced
  • cups shredded Cheddar cheese
  • 2 cups milk
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. In a medium saucepan, melt butter over medium heat. Whisk in flour until smooth, then slowly add milk. Stir until sauce thickens, about 3–5 minutes. Season with salt and pepper.
  2. Spread half of the sliced potatoes in the bottom of the slow cooker. Top with half of the diced ham and half of the Cheddar cheese. Pour half of the white sauce evenly over the layers.
  3. Add remaining potatoes, ham, and cheese. Pour the rest of the sauce on top, ensuring every slice gets coated.
  4. Cover and cook on LOW for 4 hours, or until potatoes are tender when pierced with a fork.
  5. Let the casserole rest for 10 minutes before serving.
