- Slice the smoked sausages into 1-inch pieces. Cut the bell pepper into 1-inch chunks and the red onion into wedges. Keep cherry tomatoes whole.
- In a bowl, combine olive oil, salt, and black pepper. Add bell pepper and onion, then toss to coat. Let sit for about 15 minutes.
- Thread sausage, cherry tomato, bell pepper, and onion onto skewers, repeating until filled. Leave a little space at each end for easy handling.
- Preheat grill to medium heat (about 350°F). Clean and lightly oil the grates to prevent sticking.
- Grill skewers for about 5–7 minutes per side, turning occasionally, until vegetables are tender and everything has charred edges and grill marks.
- Use a thermometer to ensure the sausage reaches at least 160°F in the center. Remove from grill once the target temperature is reached.
- Rest skewers on a platter for about 5 minutes so juices redistribute and sausages stay juicy.
- Sprinkle with chopped parsley (optional) and serve warm with your favorite dipping sauce or side.
