Ingredients
  

  • 4 links smoked sausages pre-cooked, any variety, cut into 1-inch pieces
  • 1 large bell pepper cut into 1-inch pieces
  • 1 large red onion cut into wedges
  • 8 cherry tomatoes whole
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 2 tablespoons parsley optional, chopped for garnish

Method
 

  1. Slice the smoked sausages into 1-inch pieces. Cut the bell pepper into 1-inch chunks and the red onion into wedges. Keep cherry tomatoes whole.
  2. In a bowl, combine olive oil, salt, and black pepper. Add bell pepper and onion, then toss to coat. Let sit for about 15 minutes.
  3. Thread sausage, cherry tomato, bell pepper, and onion onto skewers, repeating until filled. Leave a little space at each end for easy handling.
  4. Preheat grill to medium heat (about 350°F). Clean and lightly oil the grates to prevent sticking.
  5. Grill skewers for about 5–7 minutes per side, turning occasionally, until vegetables are tender and everything has charred edges and grill marks.
  6. Use a thermometer to ensure the sausage reaches at least 160°F in the center. Remove from grill once the target temperature is reached.
  7. Rest skewers on a platter for about 5 minutes so juices redistribute and sausages stay juicy.
  8. Sprinkle with chopped parsley (optional) and serve warm with your favorite dipping sauce or side.
