Ingredients
  

  • 4 6 ounce filet mignon steaks
  • 1 teaspoon seasoned salt
  • ½ teaspoon black pepper
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh rosemary chopped
  • 1 large onion thinly sliced
  • 1 tablespoon butter
  • ¼ cup crumbled blue cheese

Method
 

  1. Season the filet mignon steaks with seasoned salt and black pepper, pressing gently to adhere.
  2. In a medium bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, and chopped rosemary to create the marinade.
  3. Pour the marinade over the steaks in a shallow dish, turning to coat. Cover and refrigerate for up to 30 minutes.
  4. Preheat your grill or grill pan over medium-high heat and lightly oil the grates.
  5. Grill the marinated steaks for 4-6 minutes per side, or until desired doneness is reached.
  6. Meanwhile, melt butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 10 minutes.
  7. Remove steaks from the grill and let them rest for 5 minutes.
  8. Top each filet mignon with caramelized onions and a sprinkle of blue cheese before serving.
