Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • teaspoons ground cinnamon
  • 1 cup unsalted butter softened (2 sticks)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats not instant
  • Optional: 1 cup raisins or chocolate chips

Method
 

  1. Gather all ingredients and allow butter and eggs to come to room temperature for best results. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined.
  3. In a large bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract until fully incorporated.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined.
  6. Using a wooden spoon or spatula, gently fold in the oats (and optional raisins or chocolate chips if using) until evenly distributed throughout the dough.
  7. For best results, cover the dough and refrigerate for at least 30 minutes.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Slightly flatten each cookie with the back of a spoon.
  9. Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden but centers still appear slightly underdone.
  10. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely. Store in an airtight container.
