Ingredients
  

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 2 very ripe bananas mashed (about 1 cup)
  • ½ cup chopped walnuts or chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture and beat until well combined.
  5. Mix in the mashed bananas until incorporated. The mixture might look slightly curdled, but that's normal!
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  7. If using, fold in the chopped walnuts or chocolate chips.
  8. Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the tops are set.
  10. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
