Ingredients

  • 4 cups water
  • 2- inch piece fresh ginger root thinly sliced
  • 1/4 cup honey or to taste
  • 2 lemons juiced (about 4 tablespoons)
  • Optional: cinnamon stick or star anise for additional flavor

Method

  1. Gather all your ingredients and prepare the ginger by peeling and thinly slicing it. Thinner slices will release more flavor.
  2. In a medium saucepan, bring 4 cups of water to a boil over high heat.
  3. Add the sliced ginger to the boiling water, reduce heat to medium-low, and simmer for 5-7 minutes to allow the ginger flavor to infuse into the water.
  4. Remove the saucepan from heat and let the ginger steep for an additional 2 minutes.
  5. Strain the tea into a pitcher or directly into mugs to remove the ginger pieces.
  6. Add honey while the tea is still hot, stirring until completely dissolved.
  7. Squeeze fresh lemon juice into the tea and stir to combine.
  8. Taste and adjust sweetness with additional honey if desired.
  9. Serve immediately while hot, garnished with a slice of lemon or a small piece of ginger if desired.
