- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine squash cubes, diced onion, cheddar cheese, parsley, salt, and pepper. Toss gently until evenly mixed.
- Transfer the squash mixture into the prepared baking dish, spreading it into an even layer.
- In a small bowl, stir together breadcrumbs and melted butter until crumbs are fully coated.
- Sprinkle the buttery breadcrumb topping evenly over the squash mixture.
- Bake uncovered for 1 hour and 15 minutes, or until the squash is tender and the topping is golden brown.
- Allow to rest for 5–10 minutes before serving.
