Southern Baked Yellow Squash

This baked yellow squash casserole is topped with a buttery bread crumb topping for a delicious savory addition to any summer meal.

Ingredients
  

  • 3 pounds yellow summer squash cut into 1-inch cubes
  • 1 medium onion finely diced
  • 1 cup shredded sharp cheddar cheese
  • ½ cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste
  • 1 cup plain breadcrumbs preferably panko
  • ½ cup unsalted butter melted

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine squash cubes, diced onion, cheddar cheese, parsley, salt, and pepper. Toss gently until evenly mixed.
  3. Transfer the squash mixture into the prepared baking dish, spreading it into an even layer.
  4. In a small bowl, stir together breadcrumbs and melted butter until crumbs are fully coated.
  5. Sprinkle the buttery breadcrumb topping evenly over the squash mixture.
  6. Bake uncovered for 1 hour and 15 minutes, or until the squash is tender and the topping is golden brown.
  7. Allow to rest for 5–10 minutes before serving.
