Pimento cheese is jazzed up with jalapeño and cayenne pepper for a creamy spreadable cheese that's delicious on crackers, as a dip, or in sandwiches.

Ingredients
  

  • 2 cups shredded extra-sharp Cheddar cheese
  • 1 cup mayonnaise
  • 4 ounces diced pimentos drained
  • 1 tablespoon finely chopped jalapeño seeded for less heat
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch of cayenne pepper adjust to taste
  • Salt and freshly ground black pepper to taste

Method
 

  1. In a large mixing bowl, combine the shredded Cheddar cheese and mayonnaise until you achieve a smooth, creamy base.
  2. Fold in the diced pimentos, chopped jalapeño, Worcestershire sauce, garlic powder, onion powder, and cayenne pepper.
  3. Season with salt and pepper, adjusting the heat to suit your taste.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld beautifully.
  5. Serve chilled with crackers, crisp vegetables, or as a zesty sandwich spread.
