- In a large bowl, whisk together honey, sherry, soy sauce, bean sauce, salt, and pepper. Add chicken pieces and toss until evenly coated. Let sit for 10 minutes.
- While chicken marinates, mince ginger, slice garlic, tear chiles, and chop scallions.
- Heat oil in a wok or large skillet over high heat. Add marinated chicken in a single layer, cooking 2–3 minutes per side until golden. Remove and set aside.
- In the same pan, add garlic, ginger, and dried chiles. Stir constantly for 30 seconds until fragrant.
- Return chicken to the wok. Add scallions and stir-fry 1–2 minutes until the sauce coats the chicken.
- Transfer to a platter and serve hot with steamed rice or noodles.
