Ingredients
  

  • 4 cups mixed salad greens washed and dried
  • 1 cup cucumber thinly sliced
  • 1 cup radishes thinly sliced
  • 1 cup bell pepper diced
  • 1/4 cup fresh orange juice freshly squeezed
  • 1/4 cup olive oil extra virgin
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground

Method
 

  1. Gather all the fresh vegetables. Wash and dry the mixed greens in a salad spinner. Slice cucumber, radishes, and bell pepper.
  2. In a bowl, whisk together orange juice, olive oil, honey, Dijon mustard, salt, and black pepper until emulsified.
  3. In a large mixing bowl, layer the greens, cucumber, radishes, and bell pepper.
  4. Drizzle the vinaigrette over the salad and gently toss with tongs to coat evenly.
  5. Transfer to a serving platter or individual bowls. Garnish with citrus slices or seeds.
