Stuffed Pork Chops

These stuffed pork chops have a rich and creamy mushroom stuffing baked on top of tender pan-fried pork chops for a comforting, family-pleasing meal.

Ingredients
  

  • 4 bone-in pork chops 1 inch thick
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 8 ounces cremini mushrooms sliced
  • ½ cup onion finely chopped
  • 2 garlic cloves minced
  • 4 ounces cream cheese softened
  • ¼ cup bread crumbs
  • ¼ cup shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Pat the pork chops dry and season generously with salt and pepper on both sides.
  2. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add chops and sear 3–4 minutes per side until golden. Transfer to a baking dish.
  3. In the same skillet, melt 2 tablespoons butter. Add mushrooms, onions, and garlic. Cook 5 minutes until fragrant and tender.
  4. Stir in cream cheese until melted. Remove from heat and mix in bread crumbs, cheddar, and parsley. Season with a pinch of salt and pepper.
  5. Preheat oven to 350°F (175°C). Spoon mushroom mixture over each chop, pressing lightly. Bake uncovered for 35–40 minutes until pork reaches 145°F.
  6. Let chops rest 5 minutes before serving.
