- Pat the pork chops dry and season generously with salt and pepper on both sides.
- Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add chops and sear 3–4 minutes per side until golden. Transfer to a baking dish.
- In the same skillet, melt 2 tablespoons butter. Add mushrooms, onions, and garlic. Cook 5 minutes until fragrant and tender.
- Stir in cream cheese until melted. Remove from heat and mix in bread crumbs, cheddar, and parsley. Season with a pinch of salt and pepper.
- Preheat oven to 350°F (175°C). Spoon mushroom mixture over each chop, pressing lightly. Bake uncovered for 35–40 minutes until pork reaches 145°F.
- Let chops rest 5 minutes before serving.
