- Preheat your oven to 350°F (175°C) and gather all your ingredients.
- Rinse the turkey wings and pat them completely dry with paper towels. This helps achieve crispy skin.
- In a small bowl, combine garlic powder, onion powder, paprika, dried thyme, dried rosemary, salt, black pepper, and cayenne pepper (if using).
- Rub the turkey wings with olive oil, then thoroughly coat them with the seasoning mixture, making sure to get underneath the skin where possible.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Sprinkle flour over the onion and garlic mixture, stirring constantly for 1-2 minutes to create a roux.
- Gradually whisk in the chicken broth and heavy cream. Bring to a simmer and cook until slightly thickened, about 3-5 minutes.
- Arrange the seasoned turkey wings in a roasting pan or large baking dish. Pour the sauce mixture over the wings.
- Cover the baking dish tightly with aluminum foil and bake for 1 hour and 30 minutes.
- Remove the foil and continue baking for another 30 minutes or until the turkey wings are golden brown and the internal temperature reaches at least 165°F (74°C).
- Let the turkey wings rest for 10 minutes before serving. This allows the juices to redistribute for maximum tenderness.
- Spoon the thickened gravy from the baking dish over the wings when serving.
