Ingredients
  

  • 5 large turkey wings about 3-4 pounds, separated at joints if desired
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper optional, for heat
  • 2 cups chicken or turkey broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour for gravy thickening

Method
 

  1. Preheat your oven to 350°F (175°C) and gather all your ingredients.
  2. Rinse the turkey wings and pat them completely dry with paper towels. This helps achieve crispy skin.
  3. In a small bowl, combine garlic powder, onion powder, paprika, dried thyme, dried rosemary, salt, black pepper, and cayenne pepper (if using).
  4. Rub the turkey wings with olive oil, then thoroughly coat them with the seasoning mixture, making sure to get underneath the skin where possible.
  5. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  6. Add minced garlic and cook for another minute until fragrant.
  7. Sprinkle flour over the onion and garlic mixture, stirring constantly for 1-2 minutes to create a roux.
  8. Gradually whisk in the chicken broth and heavy cream. Bring to a simmer and cook until slightly thickened, about 3-5 minutes.
  9. Arrange the seasoned turkey wings in a roasting pan or large baking dish. Pour the sauce mixture over the wings.
  10. Cover the baking dish tightly with aluminum foil and bake for 1 hour and 30 minutes.
  11. Remove the foil and continue baking for another 30 minutes or until the turkey wings are golden brown and the internal temperature reaches at least 165°F (74°C).
  12. Let the turkey wings rest for 10 minutes before serving. This allows the juices to redistribute for maximum tenderness.
  13. Spoon the thickened gravy from the baking dish over the wings when serving.
